Skirt Steak / Fajita Beef

Skirt steak makes a great fajita.  Much like the flank steak, the skirt steak is a thin, lean piece of meat.  It has a more intense beefy flavor than flank steaks, however, we recommend cooking no more than medium rare for good texture.
